Sardines are a great source of nutrients packed full of vitamins, minerals and healthy fats. These delicious pesto stuffed sardines make for a great snacks, salad toppers, or even eaten on their own. With some fresh squeezed lemon juice over the top, you will be hooked.
2 cups Fresh spinach, packed
1 Garlic clove
1/4 cup Almonds
2 tbsp olive oil
Salt, to taste
6 Fresh sardines, cleaned
2 tbsp Coconut oil, melted
Course sea salt, to taste
Black pepper, to taste
1 lemon, cut in wedges
1.Preheat the broiler. Place the top shelf about 6 inches from the broiler in your oven.
2.Combine all the ingredients for the pesto in a food processor. Blend until a paste forms. Set aside.
3.Rinse the sardines and pat dry with a paper towel.
4.Place the sardines on a foil lined baking sheet.
5.Stuff each sardine with 1 tbsp of the pesto.
6.Brush both sides of the sardine with coconut oil and season with salt and pepper.
7.Place the sardine sunder the broiler and cook for 4 minutes on each side, until cooked through.
8.Remove from the oven and serve. Tastes great with a squeeze of fresh lemon juice.
