Blackberries are among the healthiest fruits, they contain high levels of antioxidants, and vitamin C which helps the body form while maintaining connective tissue. Making these wonderfully fruity almond flour blackberry paleo muffins are a great option for on the go breakfast, or a healthy dessert after dinner.


 

Ingredients:
2 cups almond flour
4 eggs
2 Tbsp Organic raw honey
½ tsp baking soda
1 tsp apple cider vinegar
2 cups blackberries

Directions:

  1. Preheat oven to 350 degrees, line muffin pan with muffin liners
  2. In a medium bowl mix baking soda and almond flour
  3. In another bowl combine eggs, honey and vinegar
  4. Blend egg mixture into almond flour mixture, stirring until combined then add the berries
  5. Using a ¼ cup scoop out batter into prepared muffin pan
  6. Bake for 15min or until slightly browned
  7. Cool for 30 minutes
