When deciding to have a nice light meal especially dinner, nothing goes better with the majority of meats and vegetables most tend to have then a fresh, crispy, and light Apple Paleo Slaw. This dish is also a excellent choice to double or quadruple to bring to a gathering of friends and family.
1/2 head cabbage, green, chopped or shredded
1 medium apple, tart, grated or julienne; would recommend granny smith
1 medium carrot, peeled and chopped or julienne
1 large celery stalk, chopped or julienne
1 medium bell pepper, chopped or julienne
1/2 small red onion, sliced thinnly
1/4 cup olive oil
1 medium lemon, juiced
2 tbsps honey, raw and natural
1 tsp celery seed
1/4 tsp sea salt
- Toss the cabbage, apple, celery, carrot and bell pepper together in a large bowl.
- In a smaller bowl, whisk together olive oil, lemon juice, honey, celery seed, and sea salt.
- Drizzle over apple coleslaw and toss to coat.
