Much like the previously posted Smooth Paleo Almond Butter, this recipe for Chunky Paleo Almond Butter is not much different. Just one extra step. Some have a preference of smooth other for chunky. In my opinion it really depends on what you are going to be eating almond butter with that determines if smooth or chunky would be best to use.
2 and 1/4 cups almonds, plain, raw and unsalted
- Preheat oven to 350 degree F
- Spread 2 and 1/4 cup almonds on baking sheet and roast for 15 minutes. Check the almonds at 10 minutes due to temperature difference between older and newer ovens.
- Once almonds are roasted measure out 1/4 cup of roasted almonds and roughly chop with knife or in food processor. Set a side.
- Pour remaining 2 cups of roasted almonds in to food processor and blend until desired smoothness 5-10 minutes. Once consistency is achieved add the 1/4 cup roughly chopped roasted almonds to food processor and pulse for 10 seconds until incorporated.
