This refreshing salad is perfect during those hot summer days, with the sweetness of the strawberries and crunchiness of the cucumber even out the bite to the poppy seed vinaigrette. This cucumber strawberry salad is extremely simple to make, have it for an appetizer, or snack between meals. It can also be used for a hearty lunch meal by adding just a few more added optional ingredients which I listed below. The vinaigrette even more simple to make, sure you can buy poppy seed vinaigrette from you local grocery store, however, it is way healthy to make homemade to skip all the unnecessary added ingredients that keep store bought shelf stable.
2 large cucumbers, thinly sliced
4 cups strawberries, sliced
Romaine lettuce, chopped
Poppy seed Vinaigrette:
¼ cup raspberry vinegar
1 tsp ground dry mustard

1 tbsp poppy seeds
¼ cup raw honey
- Combine all the ingredients for the poppy seed vinaigrette in a bowl, mix well.
- In a salad bowl, toss the ingredients for the salad together.
- Pour the dressing over the salad and serve.
