This fresh and wonderful mango and avocado paleo salsa is a fantastic topper to any meal. All types of fish and meats, really adds a pop of colour to the plate and outstanding flavour. An amazing twist on traditional tomato salsa.
2 cups diced ripe mango
½ cup finely diced red onion
1 cup avocado, diced
¼ cup fresh cilantro, minced
2 tablespoons extra virgin olive oil
freshly ground black pepper
big pinch of kosher salt, or course sea salt
¼ teaspoon red pepper flakes
Juice from 1 lime
- Grab mangos about 2 and dice them up. Dice red onion, mince cilantro.
- Place the diced mango in a bowl and add red onion, avocado, minced cilantro, oil, red pepper and juice from 1 lime.
- Stir to combine well, add kosher or coarse sea salt and freshly ground pepper to taste.
- Chill in refrigerator before serving.
