Deliciously flavoured and perfectly seasoned oven roasted paleo carrots are an excellent side dish to any meal. Even as a snack for those not so hungry times for a big meal. Adding the fresh minced dill after roasting can be a completely opitional, personally I enjoy the taste of dill on carrots. Fresh minced parsley added after roasting is very tasty as well, also you can place a sprig of rosemary in between the carrot sticks while roasting for added flavour.
12 carrot, peeled
3 tbsp extra virgin olive oil
1 1⁄4 tsp kosher salt or sea salt
1⁄2 tsp black pepper, freshly ground
2 tbsp fresh dill, minced
- Preheat the oven to 400 degrees F. Prepare baking sheet with parchment paper, set aside.
- If carrots are thick, cut them in half lengthwise; if not, leave whole.
- Toss them in a bowl with the olive oil, salt, and pepper. Transfer to a sheet pan in 1 layer and roast in the oven for 20 minutes, until browned and tender.
- Toss the carrots with minced dill, and serve.
