In my house we all used to love breaded chicken, especially stuffed breaded chicken. Sometimes we did get a little tired of the Italian Seasoned Paleo Bread Crumbs,So in the heat of experimenting with a bunch of things I found in my pantry. From past experience of baking coconut cookies in the oven, that the baking really brings out the full taste and flavour of it. So many delicious flavours packed in to this Paleo Coconut Almond Crusted Chicken.

½ cup unsweetened coconut, shredded
¼ tsp curry powder
1 pinch sea salt and freshly ground pepper
5 tbsp virgin coconut oil, melted
½ cup almonds, chopped
2 -8oz breasts chicken
  1. Preheat oven to 350 degrees F.
  2. Grease 9 x 13 baking dish with coconut oil.
  3. In a small bowl mix coconut, almonds, curry, salt and pepper.
  4. Rinse chicken and pat dry with a paper towel. Set aside.
  5. Melt coconut oil.
  6. Dip chicken in coconut oil, then in coconut/almond mixture.
  7. Place coated chicken in single layer in baking dish.
  8. Drizzle remaining coconut/almond mixture over the top.
  9. Bake 40 minutes or until internal temperature reaches 160 degrees F.
