If you ever though you were not going to get to have an delicious egg salad sandwich again once starting your paleo diet, think again. Avocado makes for an extraordinary flavourful alternative to mayonnaise. When you have finished mixing all the ingredients together for this recipe, give it a little taste and to see if it needs more sea salt and black pepper. If you want more of a mayonnaise taste you can add up to 1/2 teaspoon vinegar.
1 avocado – peeled, pitted, and mashed
3 eggs hard-boiled, peeled and chopped
1 tbsp paleo pickle relish
1 tbsp onion, chopped
1 tbsp celery, chopped
course sea salt and black pepper to taste
- Mix avocado and eggs together in a bowl.
- Add relish, onion, celery, and salt; mix well.
- Refrigerate and serve chilled
