A lot of people I tend to have dinner parties for like the chunky kind of guacamole, and there are people out there that prefer the smoother version. Below I have added a link to a guacamole recipe that is on the chunkier side. If you would like a smoother guacamole follow the recipe below exactly. Now one thing that is definitely interchangeable in this amazing appetizer, snack, or lunch dish is the bell pepper. You can use portobello or white button mushroom tops, jalapenos, celery stalks, zucchini boats, egg plant slices are just a few examples for substitutions that come to mind.

8 small bell peppers or 4 regular bell peppers, assorted colours, cored and seeded
2 avocado, pitted and peeled
2 tbsp white onion or scallions(green onion), chopped
1 tbsp lime juice, fresh
2 tbsp cilantro, chopped
sea salt and black pepper, to taste
4-6 bacon strips, cooked, crumbled or cut in half
- After coring and seeding bell peppers, decide if you want to stuff peppers whole or cut them in to half.
- Mash together both avocados. Mix in lime juice, onion, and cilantro. Season with sea salt and black pepper to taste.
- Taste and add more sea salt, black pepper, and lime juice as needed.
- Spoon the guacamole in to either halved or whole bell peppers. Serve.
