If you have never tried a Paleo Stuff Pepper recipe for lunch or dinner, this would be the best time to try this Paleo Stuffed Pepper Soup With Cauliflower Rice. It was an extremely windy cold day and was in the mood for stuffed peppers, yet, at the same time due to the cold was really feeling like a hot and comforting bowl of soup. Therefore, I took this traditional Paleo Stuffed Pepper recipe and with a few tweaks turned it into the most delicious soup for days like today.
*Quick Note: There are two ways you can add the cauliflower rice to this paleo diet recipe. First option which is what the recipe is designed for, is to add the cauliflower rice in to the soup during step 5. As the cauliflower rice will cook to perfection in the simmer for the remaining 30 minutes. If following my recipe for Cauliflower Rice only follow step one in the directions for this option for this Paleo Soup. Second options is to have 3 cups of cooked cauliflower rice, after serving the soup in to the individual bowls, add the cooked cauliflower rice on top of the Paleo Stuffed Pepper Soup.
3 cups cauliflower rice, uncooked
1 pound extra lean ground beef (can use turkey or chicken if preferred)
1/2 cup bell pepper, green, chopped
1/2 cup bell pepper, red, chopped
1 cup onion, finely chopped
29 ounces tomatoes, petite, diced
3 garlic cloves, chopped
1 3/4 cup Basic Paleo Tomato Sauce or Paleo Tomato Sauce for more texture in the soup. Any type will do also as long as it is Paleo Friendly.
2 cups chicken broth
1/2 tsp dried marjoram, or 2 leaves finely chopped, can also use same measurements of oregano
Course sea salt and freshly ground black pepper to taste
- In medium sauce pan brown ground meat, season wit hsalt and pepper. When cooked drain fat.
- In same pan over medium heat, add bell peppers, onion, garlic. Cook 5 minutes.
- Add diced tomatoes, tomato sauce, chicken broth, marjoram or oregano and season with sea salt and pepper to

- Cover and simmer on low heat for 30 minutes.
