Taco night was always a big deal in my family growing, a time for everyone to gather around the table filling their taco shells with all their favourite ingredients. When starting the paleo diet lifestyle taco night is not one that needs to be given up. There are quite a few ways to get the same wonderful flavours with out the use of corn tortillas. In the past I have used Plantain Paleo Bread as soft tortillas, and to mix things up a bit this time a nice big taco salad bowl came to mind. The family absolutely adored it. With this Paleo Taco Salad recipe you can either mix all the ingredients together and serve or to have the tradition of making your own tacos, simply compile all the ingredients in to their own individual bowls and let the fun begin of making your very own personal taco salad bowl. Another thing to make this recipe even more fun for family dinner night, use a few decent sized leafs from a head of iceberg lettuce as bowls instead. Serve with guacamole, salsa, and sour cream on the side, and feel free to add other paleo diet friendly toppings that your own family personally enjoys.


1 lb. ground beef
1 large head romaine lettuce, coarsely chopped
2-3 Roma tomatoes, diced
5 green onions, thinly sliced
1 bell pepper (red,orange,yellow), chopped
1 cucumber, chopped

4 tbsp taco seasoning

Catalina vinaigrette:
1 cup of extra virgin olive oil
½ cup homemade ketchup
½ cup red wine vinegar
½ cup grated onion or onion powder
1 tsp paprika
Sea salt and freshly ground black pepper
½ tsp Worcestershire sauce
1/3 cup honey

Taco meat seasoning:
2 tbsp chili powder
2 tsp paprika
1 tsp onion powder
1tsp garlic powder
2 tsp ground cumin
1 tsp dried oregano
Sea salt and freshly ground black pepper


  1. In a medium bowl, combine all the ingredients for the Catalina sauce, and season with salt and pepper to taste. For a smoother sauce, combine in a food processor and blend.
  2. In a small bowl, combine all the ingredients for the taco seasoning, season again with salt and pepper to taste.
  3. Over a medium-high heat, toss the ground beef in pan. Cook until well done about ten minutes. While the beef is cooking, break it apart in to pieces.
  4. When the beef is almost done, add the taco seasoning and mix well, making sure all the meat is covered. Add a little bit of water if meat looks dry. Let the meat cool down until it’s at room temperature.
  5. In a big salad bowl, combine the lettuce, bell peppers, cucumbers, tomatoes, green onions, and beef. Top with the Catalina dressing. Gently mix everything, and serve.
