When first making this delicious Peach Paleo BBQ Sauce, the first thing I cooked with it was pork chops. This already soft, tender, and juicy meat really brings out the flavours of the peach in the BBQ sauce. Even when cooking these pork chops or any meat for that matter, always remember to season, even if a sauce is being used to baste the meat while on the bbq it is a very important step. Pork chops are not the only meat that can be use in this recipe, what ever you have on hand or personally prefer to use is just a good of a choice. With peach season right around the corner, it is the perfect opportunity to purchase lots of extra peaches to create sauce, marinades, and other recipes and store them properly during these months with the freshest of peaches for use during the Winter months, giving your meals a wonderful taste of Summer.


 

Ingredients:
4 bone-in pork chops
Fresh thyme
Sea salt and freshly ground black pepper, to taste

Peach BBQ Sauce:
2 garlic cloves, minced
1 inch fresh ginger, minced
1 onion, minced
2 to 3 peaches, cut into chunks
2 tbsp. apple cider vinegar
1 ½ cup homemade ketchup
Cooking fat, such as ghee, coconut oil, bacon fat
Sea salt and freshly ground black pepper, to taste
Optional:
¼ cup raw honey, raw and natural

Direction:

  1. In a saucepan, sauté the onion, garlic, and ginger in melted cooking fat over a medium-high heat.
  2. Cook until fragrant, add all the remaining ingredients for the BBQ sauce, and season to taste.
  3. Bring the sauce to a boil, lower heat, and let simmer for 25 to 30 minutes.
  4. Preheat your grill to medium-high.
  5. Season the pork to taste with sea salt and freshly ground pepper.
  6. Grill the pork chops for 4 to 5 minutes per side.
  7. Baste the pork chops with peach BBQ sauce and cook for another minute on each side.
  8. Serve the pork chops with fresh thyme and extra BBQ sauce.
