Whether it is fruit chunks or vegetable sticks, it is always nice to pair them with a wonderful dip. Before becoming starting a paleo diet lifestyle I always seems to default to ranch salad dressing for my vegetable sticks. Now when coming a crossed this deliciously fruity raspberry lime fruit dip, not only do I use it for other fruits like pineapple, apples, and melons, it adds wonderful flavour to raw vegetables as well. Another great idea that this fruit dip can be used for is for centre layer to paleo cakes, fruity centres to paleo doughnuts and quite a few other baking recipes.
1 cup fresh or frozen raspberries, thawed and drained
1 cup full-fat coconut milk
1 to 2 tbsp lime juice
1 tsp lime peel, grated
2 tbsp honey
- Place the raspberries in a blender and pulse until smooth.
- Strain the raspberry purée and discard the seeds.
- In a bowl, combine the coconut milk, honey, lime juice, lime zest, and raspberry sauce, and stir until well blended.
- Serve cold with fresh fruits.
