The main reason for choosing almond butter over peanut butter is that almonds have a slightly higher amount of fiber and vitamin-E, keep in mind there are a lot of health benefits to all different types of nuts but when on a paleo diet lifestyle peanuts are a legume which are a food that are not something our ancestors ate. Most store bought almond butter has quite a bit of fillers in it. Keep in mind that it takes a few minutes for the almonds to release the oils for a creamy nut-butter. In the first few minutes, you will notice a dry, meal-like consistency. With this recipe you will have delicious homemade smooth almond butter in less than 30 minutes.
2 cups almonds, plain, raw and unsalted
- Preheat oven to 350 degree F
- Spread 2 cups of almonds on a baking sheet and roast for 15 minutes. Check the almonds at 10 minutes due to temperature difference between older and newer ovens
- Pour 2 cups of roasted almonds in a food processor and blend until desired smoothness, about 5-10 minutes.
